Soy products are broadly classified into two main categories: soy-based foods made from soybeans, and other bean products made from various miscellaneous beans.

  Soy foods include soy flour, tofu, shredded tofu, soy milk, soy milk powder, fried tofu skin, yuba, dried tofu, bean curd sticks, vegetarian chicken, vegetarian ham, fermented soy products, soy protein powder and its derivatives, soy bars, and frozen soy products, among others.

  Fermented soy products such as tempeh, fermented bean curd, douchi, and sour soy milk.

  Soy products are foods made primarily from soybeans, adzuki beans, green peas, garden peas, broad beans, and other legumes through processing. Most soy products consist of tofu—produced by coagulating soy milk—and its various derived products.

  Soy products are rich in soy isoflavones, dietary fiber, and other bioactive compounds. Compared with starchy legumes such as red beans and mung beans, soy products contain less starch and boast higher-quality protein.

  Dietary fiber powerhouses: edamame and soybean pulp. Edamame is a fresh‑eating legume harvested while the soybeans are still immature; it’s not only rich in plant protein but also boasts high levels of potassium, magnesium, and B‑vitamins.
